VEGETABLE LASAGNA
ingredients
- eggplant
- portabella mushrooms
- zuchinni
- parmesan cheese
- fresh basil
- garlic cloves
- salt

Spray cookie sheet with Pam

Slice & lay out long strips of eggplant, whole portabella mushrooms (no stem) & zuchinni

Bake @450 for 30 minutes

Turn & salt
- 5
Use glass loaf pan & spray with Pam

Layer with veggies

Mash garlic, fresh basil, & 1/2 cup of parmesan cheese & spread over veggies between layers

Bake @375 for approx. 1hour 1/2, covered with tinfoil
notes
you can layer with any vegetables you prefer. Also delicious with red peppers and onions as well!
