Pistachio Crusted Salmon

ingredients
- 1/4 cup Pistachios, finely chopped
- 1 tsp Garlic, minced
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 2 fillets Fresh salmon (4-ounces each)
- 2 Tbls Extra-virgin olive oil
- 3/4 cup Lemon Cream Sauce
- Garnish: chopped pistachios
- 1/2 Tbls Butter
- 1/2 Tbls Flour
- 1/2 cup Chicken broth
- 1/4 cup Heavy whipping cream
- 2 tsp Lemon zest
- 1/8 cup Fresh lemon juice
- 1/2 tsp Salt
- 1/8 tsp White pepper

1. In a shallow dish, combine pistachios, garlic, salt, and pepper.

2. Dredge salmon in pistachio mixture, pressing gently to coat.

3. In a small skillet, heat oil over medium-high heat. Add salmon and cook 4 minutes, or until browned.

4. Reduce heat to medium; turn salmon, and cook 5-6 minutes, or until salmon flakes easily with a fork.

5. Serve with Lemon Cream Sauce and garnish with chopped pistachios.
Lemon Crème Sauce

1. In a small saucepan, melt butter over medium-high heat. Add flour, whisking to combine; cook for 2 minutes.

2. Reduce heat to medium; stir in broth and cream, simmer 3 minutes, or until thickened, whisking frequently.

3. Add other ingredients, whisk together.
