GRANDMA'S HAMENTASHEN
ingredients
Dough & Filling- 4 eggs slightly beaten
- 1 1/2 lbs. pitted prunes
- 1 1/2 cups sugar
- 1/2 lbs. raisens
- 1 cup veg. oil
- small jar strawberry preserves
- 2 tsps. baking powder
- 2 Tbs. matzo meal
- 1/2 tsp. salt
- juice one lemon
- 1/2 cup orange juice
- 5 - 3/4 cups unsifted flour

Grind prunes and raisens, mix in rest of ingredients, put aside.

In large bowl, put in flour, add rest of ingredients. Form into a soft dough. Dough should be soft but not sticky. Add more flour a little at a time, if dough is sticky. Roll on slightly floured board to about

1/4 inch thick. Cut with round cutter about 3 - 4 inches. Put heaping tsp. filling in center, and form a triangle. Brush with beaten egg white and sprinkle with cinnamon/sugar.

Bake 350 degrees for 20 minutes or until brown. These freeze very well. Dough may be rolled over and over.
