Calabacitas
I love this light dinner. Sometimes I’ll bake the calabacitas in a pablano pepper with cheese or by itself as a side item.
ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 small zucchini, diced
- 1 cup of frozen corn
- 1 jalapeno pepper, seeded and chopped
- 1 (15 oz) can black beans, drained and rinsed
- 1/2 teaspoon salt, to taste
directions
Heat olive oil in large skillet over medium heat. Add onions and garlic, cook and stir until tranlucent. Add zucchini and peppers and saute until soft. Stir in corn and beans. Heat thoroughly. Salt to taste.
