French Toast Breakfast Casserole
A delicious breakfast or brunch casserole that reheats nicely under the broiler.
ingredients
- 4 Tbsp butter or margarine
- 3 large Granny Smith apples peeled and thinly sliced
- 3/4 cup brown sugar-packed
- 2 Tbsp water
- 1 tsp cinnamon
- French bread sliced 1" thick
- 4 large eggs
- 1 1/4 cup milk
- 2 tsp vanilla
- 1 tsp spiced rum

Melt butter and add apples. Cook 5 minutes.

Add brown sugar, cinnamon, water and rum, cook 10 minutes until apples are tender.

Spoon apples into a 9x13 pan or casserole dish,arrange bread over apples to cover.

Beat eggs with milk and vanilla, pour over bread.

Cover with plastic wrap and refrigerate overnight.

To bake, uncover and place in a 375° oven for 35 minutes or until apples bubbly and bread is crips.

Remove from oven and let rest for 10 minutes. Flip casserole dish over onto platter. Serve warm.
