Roasted Vegetables Real Simple
ingredients
- 1 garlic hear, cut in half horizontally
- 3 sprigs rosemary
- 4 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon pepper
- 12 carrots (6 cups of one inch pieces)
- 20 small Yukon gold potatoes halved (6 cups of one inch pieces)
- 5 medium onions cut into eighths (6 cups of one inch pieces)

Preheat oven to 450°.

Toss vegetables together with oil, salt, and pepper. Place in roasting pan and cook about one hour or until tender. Stir occasionally.
Roasted asparagus variation:
Combine 2 lbs. asparagus, 2 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon pepper. Bake 13-15 minutes in a 350° oven or until crisp tender and slightly brown.
