Sas's Ultimate Spinach Atrichoke Dip
One of the best Spinach Artichoke dips ever!! A recipe that I have perfected since the first time I made in back in 2000.
ingredients
- 1/4 cup olive oil
- 2 tbsp. butter
- 3/4 cup onion, diced
- 1 1/2 tbsp. garlic, minced
- 1/2 cup flour
- 1 1/2 cups chicken broth
- 1 1/2 cups cream
- 3/4 cup parmesan cheese, grated
- 2 tbsp. bouillon
- 1 1/2 tbsp. lemon juice
- 1 tsp. sugar
- 3/4 cup sour cream
- 12 oz. spinach, chopped
- 6 oz. artichokes, chopped
- 1 cup monterey jack cheese

In a large pot, heat oil & butter over medium heat. Add onion & cook for 3 to 4 minutes. Stir in garlic & cook for 2 to 3 minutes. Sprinkle with flour & cook until forms a golden paste. Whisk in broth slowly & simmer. Stir in cream & simmer. Remove from heat, add parmesan, bouillon, lemon juice and sugar. Mix well. Add sour cream, spinach, artichokes & cheese. Stir until cheese is melted.

Serve hot with tortilla chips or fresh bread.
