Fresh Herb Potatoe Salad
ingredients
- 1 Pound Fingerling Potatoes
- 2 Ears Corn (grilled)
- Olive Oil
- 1/4 Reserved Water from potatoes
- 1 Small Red Onion finely chopped
- 2 Tablespoons Lemon Juice
- 1/2cup Sour Cream
- 1/3 cup Mayo
- 2 Tablespoons Basil chopped
- 2 Tablespoons Chives chopped
- 2 Tablespoons Parsley chopped
- Salt & Pepper to taste

Place potatoes in a pan with cold salted water about an inch over the potatoes bring water to a boil and then simmer till tender(about 15-20 minutes).Drain and cool potatoes then toss with lemon juice and salt. While potatoes are cooking clean corn then rub with olive oil place on grill till lightly charred.Remove corn from husk and add to potatoes.

Mix onions sour cream mayo and herbs then add to potatoes and corn serve at room temp.
