Beer Bagels
ingredients
- 2 packages Active Dry Yeast
- 4 1/2 cup Sifted Flour
- 1 1/2 cup Lukewarm Beer
- 3 tablespoons Sugar
- 1 tablespoon Salt

Combine yeast and 2 cups flour. Heat beer until lukewarm. Combine beer, sugar and salt. Add to yeast mixture. Beat on low speed for 1/2 minutes. Beat 3 minutes at high speed.

Stir in, by hand, enough of remaining flour to make a moderately stiff dough. Turn out onto a floured surface. Knead until smooth, about 8 minutes. Cover. Let rest 15 minutes.

Separate into 12 portions, then shape into balls. Make hold in center of each ball with floured finger. Enlarge hold and shape into bagel form. Place on baking sheet. Cover. Let rise in warm place for 20 minutes.

Combine 1 gallon water and 1 tablespoon sugar in large saucepan. Heat to boiling, reduce heat to simmer.

Cook bagels in boiling water 4-5 at a time for approximately 7 minutes, turning once. Remove with slotted spoon. Drain on absorbent paper or clean towel. Place on greased baking sheet.

Baked in 375 degrees for 30-35 minutes or until lightly browned.
