Raspberry Cheesecake Bars
ingredients
- 1 C sugar, divided in 1/2
- 1/2 C (1 stick) of butter, room temp
- 1 1/4 C flour
- 1 8 ounce pkg cream cheese, softened
- 1/2 teaspoon almond extract
- 1 egg
- 1/4 C seedless red raspberry jam
directions

Preheat over to 350 and grease a 9in pan

Combine 1/2cup sugar and butter and mix well then stir in flour until crumbly

Press mixture into pan and bake 15-18 min until edges are light golden brown(crust will not be fully cooked)

Combine remaining 1/2cup sugar, cream cheese, almond extract, and egg and beat on high until well blended and then pour over crust

Microwave 2 tablespoons of the jam until slightly meleted, pour over cream cheese filling, and swirl in with tip of spoon

Bake 18-20 min, until set, and then let cool

When cool spread remaining jam over top and refrigerate
