Pasta with Shrimp, Tomatoes, Olives and Feta
This is a recipe that I concocted from ingredients I usually have on hand. It’s quick, easy and yummy
ingredients
- Thin spaghetti, cooked (enough for 2 people)
- 1 lb. shrimp, peeled and deveined
- Butter and olive oil
- 1/2 - 1 teaspoon crushed red pepper flakes
- 1 clove of garlic, minced
- 1/2 cup of white wine
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper
- Handful of kalamata olives, coarsely chopped (don’t use canned black olives; they are not the same!)
- 4 – 6 ounces of feta cheese, crumbled

Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan. Saute garlic for a minute or two. Add wine and bring to a boil. Simmer for a couple of minutes to reduce. Add tomatoes and their liquid, Italian seasoning, salt and pepper. Let simmer for 5 or 10 more minutes. Add olives. Add cooked spaghetti and toss to coat with sauce. Let sit while you cook shrimp.

Heat 1 tablespoon butter and olive oil in small sauté pan over medium heat. Add shrimp and red pepper flakes. Season with a bit of salt and pepper. Saute 3 minutes or until shrimp are pink throughout.

Add crumbled feta cheese to pasta mixture and toss to combine. To serve, put pasta mixture on plate and top with cooked shrimp
