Spaghetti Soup
Low-fat, hearty soup. Great with toasted hard rolls. Originally from mom’s coworker, Sally.
ingredients
- 2 Tablespoons olive oil
- 1/2 cup each diced carrots, onion and celery
- 1 pound round hamburger or ground turkey
- 2 cloves garlic
- 1 box beef stock
- 1 large can diced tomato
- 1 beef bullion cube
- ground pepper
- 1 Tablespoon dried basil
- 1/4 pound whole wheat spaghetti
- Parmesan cheese
directions

saute carrots, onion and celery in olive oil until soft
- 2
add garlic, cook for one minute

add ground beef or turkey
- 4
cook until all pink is gone in meat
- 5
add remaining ingredients

simmer for 1 hour

raise heat to bring soup to a boil

add spaghetti, breaking into small pieces

cook at a boil until spaghetti is soft (10 minutes for Barilla)

serve topped with Parmesan cheese
