Cake - Oatmeal
This was a cake that Donna enjoyed when she was younger; I haven’t made it in a long time.
ingredients
- 1 cup quick-cooking rolled oats
- 1 1/4 cups boiling water
- 1/2 cup butter, soft
- 1 cup light brown sugar, firmly packed
- 1 cup granulated sugar
- 2 eggs, beaten
- 1 1/4 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- Coconut Pecan Topping:
- 1 stick butter
- 1/4 cup pet milk
- 3/4 cup sugar
- 1/2 tsp vanilla
- 1 cup coconut
- 1 cup chopped nuts

Combine oats. butter and boiling water, stirring to blend well. Let stand for 20 minutes.

To this mixture, add sugars. eggs. flour, baking soda, cinnamon and salt; beat by hand until well mixed. Pour batter into a greased and floured loaf or tube pan. Bake at 350 deg. for 55 minutes.

While cake is baking, combine topping ingredients except coconut and nuts in a medium saucepan; mix well. Bring to a boil, stirring constantly, boil for 2 minutes. Spread over hot cake right out of the oven. Add coconut and nuts. Turn broiler on; return cake to oven to broil topping for about 4 to 5 minutes or until coconut browns.
