Salads - Orange and Beet Salad
ingredients
- 2-3 oranges
- 1 15-oz can beets, drained and diced
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- Fresh ground pepper, to taste
- 2-3 sprigs fresh mint, cut in thin strips
directions
Cut the oranges into supremes. Squeeze any remaining juice from the oranges into a large bowl. Combine the remaining ingredients and toss lightly to combine. Chill for at least 4 hours to allow flavors to mingle. Serve cold or at room temperature.
