Vegetables - Southern Praline Yams
From Neva’s Recipe Box – Chris’ Favorite!
ingredients
- 2 lbs yams or sweet potatoes
- 1/2 teas each salt and pepper
- 2 tbsp brown sugar
- 2 tbsp brandy or bourbon
- 1 egg yolk
- 2 tbsp butter
- Praline Topping:
- 2 tbsp butter
- 3 tbsp brown sugar
- 1/3 cup pecans, chopped
- 1/4 teas nutmeg

Preheat oven to 350°F.

Peel the sweet potatoes or yams, cut into chunks and boil until tender. Place the potatoes in the bowl of a food processor and add the remaining ingredients; process until smooth, scraping down bowl as necessary. Spoon potato mixture into a greased baking dish.

For the topping: melt the butter and combine with remaining ingredients. Sprinkle over the potato mixture and bake for 35-40 minutes.

*Note: for “real” Southern yams, double the praline topping and place potatoes under a broiler for the last few minutes of cooking to make the topping more crispy.
