Gumbota
ingredients
- 2 Potato’s
- 4 Medium Sized Zucchini
- 1 Onion
- 2 Cups of Fresh Green Beans. Cut in 2 inch length
- 1 can Crushed Tomatoes
- 2 Cups of Chicken Broth
- Salt
- Pepper
- Red Crushed Pepper
- 1 Clove of Garlic - crushed
- 1 tblspoon of Olive Oil

Cut Potatos and Onions into cubes and saute in olive oil until the onion start to get soft. Add Zucchini, herb and spices. Add Broth and let cook for approx. 5 minutes at medium heat. Add Tomatoes. Simmer for approx 1 1/2 hours.

Steam Green Beans in microwave for two minutes. Add the beans and cook for another 1/2 hour.
