yummy, easy lunch with lots of veggies and fruit

ingredients

  • 1/2 Tbsp slivered almonds
  • 1/4 medium peeled, cored apple (chopped) or 3/4 cup cucumber, peeled and diced
  • 1 whole wheat pita pocket (or 1 slice whole grain bread)
  • 1/4 cup diced celery
  • 1/2 cup lettuce
  • 1 1/2 tsp safflower oil mayo
  • 2 oz canned, drained light tuna (packed in water, not albacore or white)
  • 2 Tbsp lowfat plain yogurt
  • 1/4 tsp black pepper
  • 1 tsp lemon herb pepper seasoning

    Mix together 1/2 Tbsp slivered almonds; 1/4 medium peeled, cored apple (chopped) or 3/4 cup cucumber, peeled and diced; 1/4 cup diced celery;

    1 1/2 tsp safflower oil mayo; 2 oz canned, drained light tuna (packed in water, not albacore or white); 2 Tbsp lowfat plain yogurt; 1 tsp lemon-herb pepper seasoning; and 1/4 tsp black pepper. Layer 1/2 cup lettuce into 1 whole wheat pita pocket then stuff with tuna mixture and serve immediately.
