tasty southwestern-style breakfast quesadilla

ingredients

  • nonstick cooking spray
  • 1 tsp extra virgin olive oil
  • 1/4 cup minced onion
  • 1 Tbsp salsa
  • 3 oz soft tofu
  • 1/2 medium tomato, diced
  • 1 corn tortilla
  • 1/2 cup bell pepper slices
  • 2 oz low fat cheese, shredded or sliced

directions

Spray a pan with nonstick cooking spray and 1 tsp olive oil, and saute 1/4 cup minced onion, 1/2 cup bell pepper slices, and 1/2 medium tomato (diced) till tender. Drain 3 oz soft tofu, chop into cubes, and place into skillet, sauteing to a scrambled egg consistency. Place 1 corn tortilla between 2 slightly damp paper towels and microwave 20 seconds to warm. Place tofu, veggies, and 2 oz low fat cheese, shredded or sliced (I prefer sharp cheddar or pepper jack) on warmed tortilla. Broil or microwave till cheese melts, then top with 1 Tbsp salsa.

Start the day with this vegan breakfast, then have Turkey and Crackers for mid-morning snack, a Fresh Fruit Salad for lunch, Strawberry "Chocolate Pudding" for mid-afternoon snack, and a Chicken Quesadilla for dinner.
