Crawfish or Shrimp Etouffe

ingredients

  • 1 pound of crawfish or shrimp
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 stick butter or margarine
  • 3/4 cup chopped onions
  • 1 clove garlic
  • 3/4 teaspoon flour
  • Juice of 1 lemon
  • 1 cup boiling water
  • Tabasco to taste
  • Steamed rice

directions

Season crawfish or shrimp with salt and pepper. Heat butter in a skillet and add crawfish or shrimp. Saute for 3 minutes. Add onions and garlic. Cook for 10 minutes, stirring frequently. Sprinkle with flour and blend. Add boiling water, lemon juice, and Tabasco. Simmer 10 minutes. Serve over rice.
