asian chicken salad on cabbage and fresh herbs
this light salad makes a terrific meal in the summertime!
ingredients
- 4 chicken breasts
- 1 cup chicken broth
- salad:
- 1/4 head of green cabbage
- 1/4 head of purple cabbage
- 1/2 cup mint leaves
- 1/2 cup cilantro
- 1/2 cup opal basil leaves
- bean sprouts
- sauce for chicken:
- 4 oz minced ginger
- 4 garlic cloves finely chopped
- 2 TBSP sesame oil
- 4 tsps fish sauce
- 3 tsps of palm sugar
- 2 tsps chili garlic paste
- 2 roasted shallots
- roasted peanuts to garnish
- salad dressing:
- juice from 1 lime
- 1/4 cup sesame oil
- 1 TBSP sweet soy sauce
- 1 TBSP sweet chili sauce
- 1 tsp soy sauce
directions

cook the chicken in the chicken broth then shred and set aside to cool.

mix together ingredients for the chicken sauce, poor over chicken and put in refrigerator to cool. Assemble salad and mix dressing. lightly sprinkle dressing over salad then top with the chicken mixture and peanuts.
