Magic Meatloaf

ingredients

  • 1lb. ground beef
  • 1lb. ground pork
  • 1 tbsp. olive oil
  • 1 med. onion diced
  • 2 garlic cloves diced
  • 1 or 2 eggs
  • 1 cup shredded cheddar cheese
  • 1 cup italian bread crumbs
  • 1/2 cup milk
  • 3 tbsp. worcestershire sauce
  • salt and pepper to taste
  • italian seasoning to taste
  • steak seasoning to taste
  • For Glaze:
  • 3 tbsp. ketchup
  • 1/3 cup. brown sugar
  • 2 tblsp. dijon mustard

directions

Preheat oven to 450 degrees. Grease a loaf pan. Heat oil in sauce pan. Add onion and garlic to heated oil and cook 5-7 min. until carmelized. While onions and garlic are cooking pour breadcrumbs in a small bowl. Combine milk with breadcrumbs and let sit. Mix pork and beef together in a large mixing bowl. Add egg(s) and stir. Add worcestershire sauce and seasoning and cheese and mix well. Remove onions and garlic from heat. Add onions and garlic to meat mixture. Add soaked breadcrumbs to meat mixture and mix well. Scoop mixture into loaf pan and distribute evenly. Cook at 450 for 15 min. Drain pan and cook for 50 min. at 350 draining at 30 min left on the clock. Pour and brush glaze over loaf and cook for the remainder 30 min. Let sit for 10 min. to cool and set.
