Green Beans à la Zinc
Great for Potlucks!
ingredients
- 1-2 lbs. green beans
- 1/2 small finely diced red onion
- 1 clove garlic, minced
- a little orange zest to garnsihs
- handful of toasted slivered almonds
- 3 TBS extra virgin olive oil
- 2 TBS red wine vinegar
- 1/4 tsp Dijon mustard
- 2 tsp finely chopped shallot

Blanch beans in boiling water until just tender, about 4-5 minutes. Immediately drain and dip in ice water to cool. Drain beans.

Whisk together olive oil, vinegar, mustard, shallot, garlic and salt and pepper. Taste and adjust.

Put beans, dressing, almonds and orange zest in a large zip lock bag to marinate. Arrange on a nice serving platter and serve at room temperature or refrigerate and serve cold.

This is a good cook-ahead dish when you're having company.
