Tempting Pea Soup
Great on a winter day with buttered rye bread.
ingredients
- 1 package dried peas about 2 cups
- 2 quarts cold water
- 2 stalks celery including tops, chopped
- 2 carrots, chopped
- 1 medium onion, chopped
- 1 ham hock
- 1/2 tsp dried thyme
- 1/2 tsp dried marjoram
- dash of cayenne
- 1 bay leaf
- salt and pepper to taste
- Thick slice of cooked ham (optional)

Mix all ingredients in large soup pot.

Cover and cook slowly until all veggies are soft, at least an hour.

Remove ham hock and bay leaf and use submersible hand-held blender to puree until somewhat smooth. Leave a little chunky.

Remove meat from ham hock and add to soup.

You can add more ham if you’d like.

This freezes well. Just defrost and re-heat on a day when you're too tired to cook.
