SQUASH BREAD
ingredients
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 tsp. Vanilla
- 2 cups shredded squash
- 1 cup crushed pineapple (drained)
- 3 cups flour
- 1 tsp. Salt
- 2 tsp. Baking soda
- 2 tsp. Cinnamon
- 3/4 tsp. Nutmeg
- 1 cup chopped walnuts
- 1 cup raisins or currants

Beat eggs, oil, sugar and vanilla until creamy. Add shredded squash and pineapple. Add dry ingredients and mix well. Add raisins and nuts.

Divide evenly into greased loaf pans. Bake at 350 degrees for 1 hour – monitor closely as time varies depending on pan size. Cool 10 minutes before turning out onto rack to cool completely.
