Arugula Lemon Salad
Simple and delicious
ingredients
- 1 lb. arugula
- 1 can white cannellini beans, rinsed and drained
- Juice of 1 Lemon
- 2 TBS. Extra Virgin Olive Oil
- 1/2 tsp. coarse salt
- Shaved Parmesan Cheese
directions

Toss arugula and cannellini beans with lemon juice. Drizzle with olive oil and toss again.

Shave Parmesan cheese on top.

Salt and pepper to taste.

Goes great with steak or fish.
