BUBBA'S CRISPY HOT WINGS

ingredients

  • 6 pounds chicken wings
  • 1 cup flour
  • 1 tsp paprika
  • 2 tsps dried basil-divided
  • 1 tsp salt
  • 1/2 tsp ground red pepper
  • Vegetable oil for frying
  • 1/2 cup butter
  • 1/2/ cup hot sauce

    Cut wing tips off. Cut wings in half at joint.

    Combine flour, paprika, 1 tsp of basil, salt and pepper. Dredge chicken wings in flour mixture.

    Heat 2 inches of oil in cast iron dutch oven over medium heat. Fry wings in batches for 10 minutes. Drain on paper towels.

    In small saucepan, melt butter over medium heat. Stir in hot sauce and remaining 1 tsp basil. Cook for 5 minutes. Pour sauce over wings and toss lightly to coat.
