Twice Baked Potatoes
I usually use the “dump and pour” method for this but I tried to put together a “recipe” so feel free to modify it if it doesn’t seem quite right!
ingredients
- 4 potatoes cut into large chunks
- (I leave the skin on but it can be removed if you prefer.)
- 2 stalks of celery chopped
- 5 green onions chopped
- 1 stick butter
- 12 slices of bacon fried extra crispy
- Velveeta cheese chunks
- salt and pepper to taste
- milk
directions
Boil potato chunks in water until fork tender. Drain water. Saute the onions and celery in the butter for 5 minutes. Pour sauteed veggies and butter over drained potatoes. Mix potatoes with electric mixer and add enough milk for semi chunky consistency. (they should be chunky-not smooth like regular mashed potatoes) Add salt and pepper to taste. Crumble bacon and add to potatoes; add Velveeta cheese chunks to potatoes. Mix well by hand and place potato mixture in casserole dish, pat with butter on top for browning and bake at 350 for 20 minutes.

You can substitute with Bacos or other imitation bacon but it is not as good as the real thing! The amount of Velveeta depends on how cheesy you want them. I usually chunk about a 2" piece.
