Chocolate Bourbon Pecan Pie
ingredients
- 1 9" Pie Crust
- 3 large eggs, slightly beaten
- 1 cup corn syrup (light or dark)
- 1 cup sugar
- 2 tbs unsalted butter or margarine
- 1 tsp vanilla
- 1/4 tsp salt
- 2 tbs bourbon
- 3-4 ounces dark chocolate
- 1 1/2-2 cups pecan halves

Preheat the oven to 350 degrees F.

To make the filling: melt the butter and chocolate in a small saucepan over medium-low heat, remove from heat and let cool. Beat the eggs in a large mixing bowl until frothy and then blend in the sugar. Stir in the syrup, vanilla, bourbon, salt and the melted butter mixture until well blended. Add pecans and mix. Bake until the filling is set and slightly puffed, about 45-55 minutes or until a thin knife inserted between the center and the edge of the pie comes out clean. Allow to cool before cutting.
