Karen's Carrot Cake

Makes 1 9x13 or 9" round cake

Everyones Favorite, recipe originated with DeDe Esque,(bet you haven’t heard that name for a while!)

ingredients

  • 2 cups sugar
  • 1 1/2 cups salad oil
  • 4 eggs (well beaten)
  • 2 tsp baking soda
  • 2 cups flour
  • 2 tsp. ground cinnamon
  • 1 tsp salt
  • 1 cup pecans (chopped and optional)
  • 3 cups carrots (grated,finely)
  • Icing:
  • 1 box powdered sugar
  • 1/2 stick margarine
  • 1 8 0z pkg cream cheese
  • 1 tsp lemon extract

directions

  • 1

    Mix sugar and oil together,add eggs and mix well.Combine the dry ingredients and stir into oil mixture.Mix until smooth.Add pecans and carrots.

    Bake in either 2 9“ round pans or 9x13” pan at 325 degrees for 30 minutes.

    Make icing, don’t ice cake until it is completely cool.

notes

I have never added nuts to this cake, and it always takes longer than 30 minutes. Just watch it closely at the end, you will be able to tell when it is done.
