bacon and tomato pasta
ingredients
- 1 box spaghetti
- 4 to 5 thick slices pancetta (cubed)
- olive oil
- 1 onion (diced)
- 4 gloves garlic (minced)
- 2 cups roma tomatoes (diced)
- 1/4 cup red wine
- 4 tbsp fresh basil (chopped big)
- 1/4 cup parmesan cheese (grated)
- salt and pepper to taste

boil water and cook pasta until done.

in skillet over medium heat add bacon and saute until bacon is crispy. remove bacon. add onion to bacon grease cook until translucent for about 7 to 8 minutes. add garlic cook for 2 minutes, then add tomatoes. saute for 5 minutes. then deglaze with wine.

add pasta to tomato mixture, add basil and bacon, salt and pepper to taste.
