Tomato and Cucumber Salad with Feta Cheese
Delicious Fresh tasting tomato salad. Can be served as a salad or a light lunch.
ingredients
- Dressing:
- 1 tablespoon extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1/4 diced garlic
- 1 teaspoon chopped Italian parsley
- 1/2 teaspoon coarse sea salt
- 1/2 dried oregano
- 1/4 teaspoon black pepper
- Salad:
- 1 pound tomatoes, drained
- 1 pound cucumber
- 1 cup red onion, thinly sliced
- 1/4 cup green olives
- 1/4 cup torn basil leaves
- 1/4 cup crumbled feta

Shake together ingredients in jar. Set aside.

Combine salad ingredients and gently toss with dressing to coat well. Serve immediately.

Makes about six servings.

3 tablespoons capers can be added if desired.
