Southwestern Tamale Pie
ingredients
- 1/4 c. olive oil
- 1 1/2 lbs. Ground chuck
- 1 c. chopped onion
- 1 clove garlic, minced
- 1/2 c. chopped green pepper
- 1 large can tomatoes (2 1/2 c)
- 1 can whole kernel corn (1 1/2 c)
- 1 tbsp. salt
- 1/2 tbsp. chili powder
- 1/4 tsp. black pepper
- 1 c. cornmeal
- 1 c. water
- 1 c. pitted ripe olives (optional)
- 1 1/2 c. milk
- 1 tsp. salt
- 2 tbsp. butter
- 1 c. grated cheddar cheese
- 2 eggs, beaten
directions
In heavy skillet heat olive oil; brown ground chuck; add onion, garlic, green pepper and cook stirring constantly until golden. Stir in tomatoes, corn, 1 tbsp. salt, chili powder and black pepper. Simmer for 5 minutes. Stir in 1/2 c. cornmeal mixed with water; cover and simmer for 10 minutes. Add olives. Put mixture into a 3 quart casserole. Using the first skillet, heat milk with 1tsp. salt and the butter. Slowly stir in 1/2 c. cornmeal; cook, stirring constantly until thickened. Remove from heat, stir in cheese and eggs. Pour over meat mixture in casserole. Bake in preheated 375 degree oven for 30 to 40 minutes or until bubbly and golden brown.
