Tomato Pie
This recipe was given to Grammy by Mrs. Harmon who ran a vegetable stand in Lexington. Ryan also worked at this vegetable stand.
ingredients
- 2 large vidalia onions
- 2 tomatoes
- 1 teaspoon basil
- 1 clove garlic
- 1/2 stick butter
- 10 oz grated cheese (can mix different cheeses)
- 2 tablespoons flour
- 2 eggs
- 3/4 cup heavy cream
- pie crust
directions

Saute onions in butter.

Bake pie crust 5 minutes at heat on package.

Put 1/3 of cheese in pie crust. Place sauted onions on top of cheese.

Saute tomatoes in olive oil. Add garlic and basil. Remove garlic cloves. Place tomato mixture on top of onions in pie crust.

Add remaining cheese.

Mix eggs, salt, and pepper, with cream and pour on top of pie.

Bake at 350 for 35 minutes.
