Fantastic Eggless Chocolate Cake

ingredients

  • 4 1/2 cups white flour
  • 1 cup cocoa
  • 3 cups sugar
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 3 tablespoons vinegar
  • 1 cup plus 2 tablespoons canola oil
  • 3 cups cold coffee
Chocolate Creamy Frosting
  • 1/2 cup sugar
  • 1 1/2 tablespoons cornstarch
  • 4 tablespoon cocoa
  • 1/2 cup boiling water or coffee
  • 1 1/2 tablespoons Saffola or canola oil
  • 1 teaspoons vanilla

directions

Stir together flour, sugar, cocoa, salt and baking soda. Mix vanilla, almond extract, vinegar, oil and coffee and add to dry ingredients. Beat until smooth in an electric mixer for 2 minutes. Grease and flour three 9” round pans. Line bottoms of the pans with wax paper for easy removal. Divide the batter equally and bake for 35 to 40 minutes in a preheated 350°F. oven. Cool and frost.

Chocolate Creamy Frosting Instructions

Add the first three ingredients to boiling liquid. Cook until thick, add oil and vanilla. Spread between layers while still warm.

Note:

If you wish to use frosting on entire cake, then double the recipe or better yet finish with whipped cream and a few toasted nuts.
