Turkey Bone Soup

  • Entire leftover turkey
  • Carrots
  • Celery
  • 1-2 boxes of Seasoned Wild Rice

    After Thanksgiving, you have an entire bird minus the light and dark meat consumed at the traditional feast. This soup makes use of the entire bird and creates a large amount of delicious soup that you can freeze and enjoy for many months.

    In a large pot, put the entire leftover turkey (you may want to break it into pieces) and cover with water. Simmer for 2 hours. Remove the pieces and allow them to cool. Strain the broth to make sure you are starting with good stock.

    While turkey is cooking, cut vegetables into bite-sized pieces. You can add whatever vegetables you like, onion, garlic, etc.

    Piece-by-piece, remove the meat from the bones. It should easily be removed and you can cut into bite-sized pieces. Return all meat to the stock-pot and dispose of carcass, fat, skin, etc.

    Make rice and add to pot.

    Return all ingredients to pot and cook through, simmering for an hour or so.

    Serve with crusty garlic bread and a wonderful salad. Freeze leftovers in meal-sized containers.
