Grilled Corn Salad with Marinated Shrimp
This is so awesome!!! The marinade is just as great on chicken breasts...Yummy.
ingredients
- 4 cloves garlic, smashed
- 3 chipolte peppers in adobe
- 1 lime, juiced
- 1/2 bunch of cilantro
- 1/2 to 1 cup olive oil
- 1 1/2 lb lg shrimp
- 6 ears corn husked
- 2 T olive oil
- 2 C cherry tomatoes
- 1 avocado
- 4 scallions chopped or red onion in rings
- 2 c arugula
- 1 lime juiced
- 4 T olive oil

Blend the garlic, chipolte peppers,lime juice, olive oil, cilantro, in blender. Place shrimp in a bow and pour marinade over and let sit while making the rest of dinner.

Preheat grill to med-high.

Prepare corn and rub with S&P. Grill and cool.

Make the salad and set aside. Make the dressing.

On a very hot grill, grill the shrimp about 2-3 min. a side.
