curried mango chicken salad
ingredients
- 4-5 boneless skinned chicken breasts
- 3 scallions, including greens, diced
- 1/2 red bell pepper, seeded and diced
- 1/2 cup stonewall kitchen curried mango grille sauce
- 1 tablespoon of mayonaise
- salt and pepper to taste
directions
Cook chicken until cooked. Cool and chop into 1/2 inch cubes. COmbine chicken and all the other ingredients. Add salt and pepper to taste. Serve with toasted pita wedges on top of cucumber rounds or as filling for hollowed tomato halves.
