Vegetable Soup
ingredients
- 6 large onions, chopped
- 4 cloves garlic, minced
- 1 teaspoon olive oil
- 6 cups celery, chopped
- 4 cups carrots, sliced
- 1 cup green pepper, chopped
- 4 cups tomatoes
- 1 head cabbage, chopped
- 3 gallons water
- 6 bouillon cubes
- 4 cups zucchini, sliced
- 2 cups green beans
- 1 large can red kidney beans
- 1/4 cup parsley, chopped
- 1 cup frozen green peas
- 1 bunch Swiss chard, chopped
directions
Sauté onions and garlic in oil in stockpot. Then add celery, carrots, green peppers, tomatoes and cabbage. Add water and bouillon cubes. Cook over low heat for 1 hour. Add the rest of the ingredients and cook for an additional 30 minutes. Add red pepper flakes and salt to taste.
