Molly Katzen's Bermuda Salad
A favorite from the Moosewood Cookbook.
ingredients
- 1 1/2 pounds of green beans, washed and trimmed
- 1 1/2 cups of red onion, sliced
- 2 cups of cheddar or colby cheese
- Marinade:
- 3/4 cup olive oil
- 3/4 cup wine vinegar
- 3/4 teaspoon salt
- black pepper to taste
- 2 cloves of garlic, minced
- parsley

Steam or blanch the beans until just tender.

Add hot to the marinade and let cool.

Add the onions and refrigerate for 3 or more hours.

Toss in cheese just before serving.
