A favorite from the Moosewood Cookbook.

ingredients

  • 1 1/2 pounds of green beans, washed and trimmed
  • 1 1/2 cups of red onion, sliced
  • 2 cups of cheddar or colby cheese
  • Marinade:
  • 3/4 cup olive oil
  • 3/4 cup wine vinegar
  • 3/4 teaspoon salt
  • black pepper to taste
  • 2 cloves of garlic, minced
  • parsley

directions

  • 1

    Steam or blanch the beans until just tender.

  • 2

    Add hot to the marinade and let cool.

  • 3

    Add the onions and refrigerate for 3 or more hours.

  • 4

    Toss in cheese just before serving.
