Candied Sweet Potatoes

Gooey and slightly caramelized -- an essential accompaniment to the Thanksgiving turkey.
ingredients
- 8 large yams or sweet potatoes
- 1 16-oz package brown sugar
- 1 stick butter
- 1/2 teaspoon baking soda
directions

1. Pierce yams and parbake at 350° for about 45 minutes or until somewhat firm (a bit of resistance to a fork). Cool and peel. Cut into 1/2 inch pieces and layer in glass baking dish.

2. In saucepan, melt butter and add in brown sugar until a thick mixture results (may not need to use all of the brown sugar); add baking soda. Mixture will change color - stir for 30 seconds and remove from heat.

3. Pour mixture over yams in baking dish. Bake uncovered at 350° for up to 1 hour until caramelized and bubbly.

This dish is very forgiving and will take extra oven time, travel, or reheating.
