Coffee Angel Food Cake
The Texas family birthday cake!
ingredients
- 1 1/2 cups sifted sugar
- 1 cup sifted cake flour
- 1/2 teaspoon salt
- 1 1/4 cups egg whites (10-12 eggs)
- 1 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla
- 1 Tablespoon instant coffee
- Icing:
- 1/2 cup butter
- 1/4 teaspoon salt
- 2 1/2 cups sifted powdered sugar
- 3 to 4 Tablespoons milk
- 1 teaspoon vanilla
- 2 Tablespoons instant coffee

Add sugar to flour and sift together 4 times.

Add salt and egg whites and beat until foamy.

Sprinkle cream of tartar over eggs and beat until soft peaks form.

Add the rest of the sugar and flour by sprinkling 1/4 cup at a time over egg whites. Blend carefully into egg whites.

Fold in flavoring.

Pour into a 10" ungreased round tube pan.

Bake at 350* for 35-45 minutes.

Invert onto cooling rack.

Icing Preparation:

Cream butter, salt, sugar slowly.

Add milk as needed and add flavoring.

Beat until light and fluffy.

Stir in 2 Tablespoons instant coffee.

Spread on cooled cake.
