Turkey Rueben
ingredients
Sandwich- 2 t butter, softened
- 2 slices bread
- 2 T Russian Dressing
- 1 oz. thinly sliced Swiss cheese
- 4 thin slices cooked turkey
- 3 T Tangy Cabbage Slaw
- 2 dill pickles
- 1/2 c mayonnaise
- 2 T ketchup
- 2 T pickle relish
- 2 T lemon juice
- 1 t Worcestershire sauce
- 1/2 t coarse salt
- 1/4 t ground pepper
- Combine all ingredients in a small bowl.
- 1/4 c white-wine vinegar
- 3 T safflower oil
- 1/4 t celery seeds
- 1 t grainy m ustard
- 1 t coarse salt
- 1/2 small head green cabbage,finely shredded
- 1 medium carrot
- Whisk vinegar, oil, celery seeds, mustard & salt in medium bowl. Ad cabbage & carrot, and stir to combine. Serve at room temperature.

Heat a grill pan over medium heat. spread butter on 1 side of each slice of bread. flip bread over and spread Russian dressing on the other sides. Place hald of the cheese on top of dressing on 1 slice. Top with turkey, cabbage slaw, and pickles. Top with remaining cheese, then the second slice of bread, buttered side up.

Place on grill pan, and cook, pressing down occasionally with a spatula, until golden brown and cheese has melted, 3-4 mins per side. (Cover with lid to encourage cheese to melt.) Cut sandwich in half and serve immediately.
