Zucchini with Herb Couscous
ingredients
- 1 1/2 cup chicken stock
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cumin
- 1/2 teaspoon saffron threads
- 2 tablespoon olive oil
- 2 tablespoons butter
- 2 zucchini, large dice
- 1 1/2 cup (10oz) couscous
- 1 cup chopped basil
- 1 cup chopped parsley

Bring chicken stock to boil. Add salt, pepper, cumin, saffron. Take off heat. Steep for 15 minutes.

Meanwhile heat olive oil and butter. Add zucchini and cook 5 minutes.

Bring chicken stock just to a boil.

Place couscous in large bowl, add zucchini. Pour chicken stock over couscous.

Cover and let stand for 15 minutes.

Add basil and parsley. Fluff with fork and serve.
