Turkish Delight and Chocolate Fridge Cake

  • 400g dark chocolate, coarsely chopped

  • 1 cup thickened cream

  • 2 tbsp Cointreau liqueur

  • 250g packet Arnott’s Marie biscuits, coarsely chopped

  • 330g Turkish delight (choc-coated or plain)

  • 1 cup pistachio kernels

  • 170g craisins

  • Stir chocolate and cream over low heat until chocolate melts and mixture is smooth. Remove from heat, stir in the Cointreau and set aside 5 mins to cool.

  • Combine the biscuit, Turkish delight, pistachios and craisins in a large bowl. Add the chocolate mixture and stir until well combined.

  • Spoon mixture into a 20cm springform pan lined with non-stick baking paper, pressing firmly to fit. Fridge 6 hours or until firm.

  • Dust cake with icing sugar, cut into slices and serve with cream.
