The Best Banana Bread
A Holy Spirit recipe from Pat Finch; really a moist banana bread
ingredients
- 2 cups flour
- 3/4 cup sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- 3 large, ripe bananas, mashed well
- 1/4 cup plain yogurt
- 2 large eggs, beaten lightly
- 6 tablespoons butter, melted and cooled
- 1 teaspoon vanilla

Heat oven to 350° and adjust rack to lower middle position. Grease bottom of loaf pan.

Combine the first 5 ingredients. Set aside. Mix mashed bananas, yogurt, eggs, butter and vanilla with a wooden spoon or spatula, in bowl. Lightly fold banana mixture into dry ingredients until combined and batter looks thick and chunky.

Bake for about 55 minutes.
notes
I usually use vanilla yogurt instead of the plain and always low-fat or non-fat.
