Stuffed Mushroom with Pinenuts
A great appetizer for the family!
ingredients
- 3/4-1 cup Panko bread crumbs
- 3 large cloves garlic, chopped
- zest of 1 lemon
- 1/2 teaspoon chopped rosemary
- 80g blue cheese, crumbled
- (or use grated parmesan if preferred)
- 1/2 cup pine nuts
- 12 large, flat mushrooms
directions
Preheat oven to 180°C fan bake (190°C regular bake). In a food processor, blitz together all the ingredients except the mushrooms. Place mushrooms (stem side up) on a lightly oiled or baking- paper-lined baking tray. Divide bread mixture over the top of each mushroom. Bake for 20 minutes or until golden and crunchy.
