Cuban style pork ribs
Excellent for a Cuban style sandwich or as the main course.
ingredients
- 3 lbs pork ribs or shoulder, boneless or bone-in
- Salt and pepper
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 4 cloves garlic, minced or garlic powder
- 1/4 teaspoon dried red chili flakes
- 1 medium onion, sliced or onion powder
- Juice of 1 lime
- 2 bay leaves

I like to use the dry versions of all ingredients and combine them in a bowl, then spread over meat like a dry rub. Place meat in a Dutch oven or roasting pan, sprinkle with lime juice. If using fresh onion and garlic, spread over meat and and cover. Cook at 225F for about six hours, till meat easily falls apart. Shred the meat by pulling apart with two forks.

Separate fat from the liquid at the bottom of the pot. Add chicken broth and bring to a boil if you need more liquid.
