Easy Enchiladas

Here is an easy good way to make enchiladas.

ingredients

  • 1 can (19 oz) enchilada sauce (red)
  • 1 can (12 oz) green chile enchilada sauce
  • 1 can (4 oz) green chiles, diced
  • 1 package (8 oz) of Mexican 3 cheese
  • 1 pound of meat - chicken or hamburger
  • Taco seasoning
  • 12 tortillas - size can depend on how full they are
  • Optional - Onion, black olives, sour cream, tomatoes and whatever else you enjoy

    Preheat oven at 350 degrees.

    Cook your meat - either brown your hamburger meat or cook your chicken so it is shredded or in small cubes and season with your taco seasoning.

    In a big bowl, mix both enchilada sauces with the green chiles. Use 3/4 of the bag of cheese and mix into the sauce along with your meat.

    In a 9“x13” lightly greased pan, start dipping your tortillas into the sauce mixture and place into the pan - wet side down. Then put some of the enchilada mixture into the middle of the tortilla and roll so the seam is face down. This is usually easier to do with another set of hands. One person dips and rolls, while the other one puts the mixture into the tortilla.

    Once all done, if there is any sauce left, pour over the enchiladas. Cover with foil and cook for about 30 minutes. Once cooked, take off the foil and put the remainder of the cheese on top. Cook until golden brown or about 5 minutes.

    Serve with rice, beans or sour cream. I also make leftovers, so the I can eat it with tortilla chips the next day. Enjoy!
