Chicken Soup

ingredients

  • 1 whole chicken or equal parts
  • 1 cheesecloth
  • 1 leek
  • 1 small turnip
  • 1 small parsnip
  • Several celery stalks plus leaves
  • 1 carrot
  • 1 small yellow onion
  • 1/2 bunch of dill
  • 1/2 bunch parsley
  • Salt
  • Pepper
  • Chicken bouillon seasoning

directions

    1) Cover chicken with cold water and bring to a boil. Then, skim foam from top.

    2) Make a packet in the cheesecloth of the vegetables. Tie tightly and add to the pot. Salt generously.

    3) Cover and simmer for 2 hours.

    4) Remove packet and chicken to separate dishes to cool. When cool, squeeze packet, discard and add liquid to pot. Skim and debone chicken separating parts for sandwiches. Strain broth, add bouillon and adjust seasonings.

    5) Divide into containers for freezer.
