Mint Suprise Cookies
Traditional Christmas Cookie for the Mitchell household
ingredients
- 1 cup softened butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tablespoon water
- 1 teaspoon vanilla
- 3 cups flour
- 1/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips (or another semi-sweet or dark chocolate)
- Mint extract (to taste)
- Walnut halves

Preheat oven to 375.

Make mint wafers:

Melt chocolate slowly in microwave. Add several drops of mint extract to taste. Spoon onto cookie sheet covered with Silpat or wax paper to make quarter sized wafers.

Make cookies:

Cream butter, sugar, and brown sugar in mixer bowl until fluffy. Add eggs, water, and vanilla and beat well.

Add flour (use extra 1/4 cup if at high altitude), baking soda, and salt and mix until just combined (do not over mix). Put in refrigerator for 1 hour.

Roll 1 tablespoon chilled dough into ball. Press your thumb into the center of the ball and place a mint wafer into the depression. Cover mint wafer with dough. Place on cookie sheet and top each with a walnut.

Bake for 10 - 12 minutes or until lightly brown.
